Guadalupe - Sourcing

This washed Pluma coffee comes from the highlands of San Agustín Loxicha, nestled in the Sierra Madre del Sur of Oaxaca, Mexico. The area’s steep mountains, fertile soils, and cool climate create the perfect conditions for the Pluma variety, a regional gem prized for its clarity and sweetness.

At Finca Juquilita, cherries are hand-picked at peak ripeness, then dry-fermented for 24 hours before being depulped and undergoing a second fermentation in small tubs. After washing, the coffee is dried slowly on shaded African beds for 10 to 12 days, allowing sugars and aromatics to develop fully. The result is a remarkably clean cup with delicate layers of buckwheat honey, oolong tea, and soft floral notes that are elegant, balanced, and quietly complex.
