In my experience, decaf coffee has never had a great reputation. I'm here to try and change that. Decaf can be just as lovely as full-caf coffee if it's treated properly. Enter Mellow - Decaf!

This lot is sourced from the Mujeres de Berruecos project in Arboleda, Nariño, where Francy Castillo supports over 20 women producers with technical training and access to specialty markets. These coffees are hand-harvested, double-fermented, and patio dried for up to 18 days. Decaffeination is carried out using the EA (ethyl acetate) process, a natural method derived from sugarcane that preserves flavour integrity while removing caffeine. The result is a smooth, layered cup with candied orange, toffee, and apricot jam.

About the Producer: Francy Castillo & Women of Arboleda

This coffee is part of the Mujeres de Berruecos Project, led by Francy Castillo. The project brings together parchment from small-scale female producers in remote areas of Nariño, connecting them to the specialty market and ensuring they receive premium prices for their work. Beyond just trade, the project provides technical assistance, tools, and field support to elevate quality while fostering sustainability and inclusion across the community.

The list of women contributing to this lot is long and inspiring, with more than twenty producers, each playing a vital role in the blend. Their combined efforts reflect a commitment to quality, environmental stewardship, and economic empowerment in one of Colombia’s most celebrated coffee regions.

Sourcing in Colombia

We came across this lot from Apex Coffee in Montreal, Canada. 

This lot comes from the highlands of Nariño, Colombia, a region defined by steep slopes, volcanic soils, and a wide range of microclimates that create ideal conditions for coffee cultivation. Grown at elevations between 1,800 and 2,100 masl, the cherries mature slowly, developing the complexity that Nariño coffees are known for. This lot comes from Arboleda, a community recognized for its sustainable farming practices and coffees with bright acidity, floral tones, and balanced sweetness.

To make this coffee decaf without stripping away its character, the beans go through a natural ethyl acetate (EA) decaffeination process. Using a by-product of sugarcane, EA gently extracts caffeine while preserving the coffee’s inherent flavours, leaving behind a clean cup with remarkable depth.

The fact that this Mexican decaf was made using water was essential, the fact that it is produced by women and the company‘s founder is also a women cinched it.
