Colombia Washed by Francy Castillo
WHOLE BEAN COFFEE
Tastes Like: Milk Chocolate, Walnut, Peach
This micro-lot comes from Francy Castillo in Nariño, Colombia and I've given her the very fitting title of Colombian Coffee Queen. Francy and her four sisters grew up helping their parents on the coffee farm, which inspired her to specialize in agronomy to support and manage the family business. She completed her university studies through an online program while working on the farm to finance her education. After graduating in 2019, she began to work as a field assistant for the FNC in her hometown of Arboleda, Nariño. She also gained experience in sensory development by working in a private export laboratory in Buesaco.
This is the coffee you turn to when you need a moment of quiet. Bold yet refined, it delivers a rich and comforting experience that lets you fully immerse yourself in your coffee ritual. With deep milk chocolate richness, the sweetness of peaches, and walnut undertones, it’s the perfect cup to savour on your own, whether you’re easing into the morning or taking a well-deserved pause in your day.

About the Producer: Francy Castillo
In 2017, Francy began a structured coffee farming project that required detailed planning from seed selection to post-harvest storage to establish new coffee plantings successfully. Choosing the right seeds and preparing the soil are essential first steps in sustainable coffee cultivation. Sustainable practices often include soil conservation techniques such as cover cropping and mulching to protect soil structure and prevent erosion. Francy also adjusted planting distances to give each coffee plant enough room for healthy root and canopy development, which is crucial for good growth. Agricultural tasks like planting, fertilizing and hand-picking ripe cherries involve neighbours and family members, a common practice on small farms. The farm’s production methods emphasize the minimal use of synthetic agrochemicals to preserve soil microbial life and overall soil health, which supports resilient and productive coffee plants.
To produce high-quality coffee, the farm applies practices that ensure product safety. Only beans that have completed their full maturation cycle are harvested, when the drupe shows a deep red color and Brix levels average above 22°. Water is added, and flotation sorting is performed, which also washes the beans before oxidation. Oxidation takes place in jute bags for two days before pulping. The pulping machine is then checked and cleaned, and the beans are pulped and stored in sacks and bag for 70 hours.
After this stage, the coffee is immersed in a tank for two rinses. Drying begins on a concrete patio at the farm for about 2 days, continues under tents for 16 days, and finishes on a concrete patio before being placed in sacks when moisture reaches 10–11.5%.
Sourcing in Colombia
Nariño, located in the Andes mountain range, is a mountainous department with diverse landscapes, ranging from the high Andean plateaus to tropical forests and Pacific Ocean beaches. Its volcanic soils, rich in minerals from the eruptions of the Galeras volcano, are essential to the exceptional quality of the coffee grown in the region. Today, Nariño coffee is not only a local economic pillar but also a key player in the global reputation of Colombian coffee.
This coffee was sourced in partnership with Apex Coffee Imports with offices in Calgary & Montreal. Speaking on the relationship they have cultivated with Francy over the years:
We have been collaborating with the Castillo family since 2021 and are very proud of this partnership. We admire the work Francy does in coffee cultivation, as well as her leadership with the Berruecos project.

One of the best beans 🥰
Love the coffee so much!!Will return for more!!
Now that I have made Mood coffee part of my morning ritual there is no going back to regular coffee brands. First, and foremost, this is women supporting women. I am so happy to see a Canadian, female-owned brand that is supporting female farmers around the globe! That alone is groundbreaking to me and I am here for it.
So far I have only tried 2 of the 3 flavours I have purchased, but I really like the most recent flavour the most (Colombia Washed by Francy Castillo). I can actually taste the subtle fruity peach notes and a hint of the milk chocolate. I think it comes across as a slightly lighter roast. Oddly enough, when I spilled coffee on myself this week, it smells kind of like soy sauce, but it certainly does not taste that way, thankfully! It might be the combination of the coffee with my lactose-free milk in it. I cannot wait to try more flavours!
I brew this every morning by freshly grinding 3-4 tablespoons of beans and placing it into my regular coffee maker with water. I have a miniature coffee maker, so I think this makes about a cup to a cup and a half of coffee (depending on how much I want to make). I like a stronger, bolder flavour.
Shipping is pretty fast, especially since I am Canadian :). It is easy for me to get more coffee any time I need or want it. I think I get a couple weeks out of 1 bag, as I am the only coffee drinker in my household and I only drink it in the morning before work.
Sooo good! Will you have this in stock again??
A game changer! Smooth, rich and fabulously flavourful. My new favourite.
Chefs kiss to this deliciousness!
Kudos to these remarkable women.
