Why This Coffee is Sassy

Tastes Like: Toasted Granola, Dried Red Fruits, Nougat

Meet Sassy, a coffee with attitude. It’s lively, vibrant, and unapologetically bold, just like its name suggests. From the first sip, you’ll notice layers of sweetness, a juicy brightness, and a depth that keeps you intrigued. It’s confident without being overpowering, smooth but never dull - a coffee that keeps things interesting. It’s the kind of cup that makes you take a moment, smirk, and think, “Oh, that’s good.”

Sassy comes from Victoria Aguirre’s farm, Mi Bendición, nestled in the highlands of Honduras. As a second-generation coffee farmer, Victoria has poured heart and soul into her craft, balancing tradition with innovation to produce something truly special. Her meticulous approach, from handpicking cherries at peak ripeness to extended fermentation and slow drying, results in a coffee that’s both refined and full of character. Supporting female farmers like Victoria is at the core of what we do, and we’re proud to share her coffee with you.

About the Producer: Victoria Aguirre

About the Producer - Victoria Aguirre

Victoria Aguirre, a wife and mother of six, started her coffee journey in 2013, determined to carve her own path in an industry that has long been dominated by market volatility and tough economic conditions. With the support of her family, she turned a small plot of land into a thriving coffee farm, focusing on quality and sustainability.

Her passion for coffee is deeply personal—it’s not just about business, but about preserving her family’s legacy and creating a future where her work is valued. Despite challenges like fluctuating prices and climate change, Victoria remains steadfast, committed to growing exceptional coffee that tells a story of resilience and craftsmanship. Her dream is to continue selling her coffee as a high-quality product, earning better prices to create improved living conditions for her family.

Victoria takes great pride in being an independent woman who contributes economically and financially to her household. We're honoured to feature her coffee and share her story.

She shares her gratitude for those who appreciate her work:

“As a woman coffee producer, I am thankful for the opportunity to share my coffee with you. Your support helps me achieve financial independence and create a better future for my family.”

Sourcing in Honduras

Sourcing in Honduras

We partnered with Semilla Coffee - a green importer based in Montreal to source this phenomenal lot from Victoria. Semilla focuses on long term partnerships and community building with the local farmers and growers in the regions that they source from. Honduras is home to some of the most stunning high-altitude coffee farms, yet many farmers struggle to receive fair prices due to outdated buying practices that favour intermediaries over producers. Semilla works directly with growers like Victoria to ensure they receive fair compensation for their labor and expertise, allowing them to reinvest in their farms and communities.

By sourcing coffee with intention, we help create sustainable opportunities that keep farmers connected to their land, their craft, and their future. When you drink Sassy, you’re not just enjoying an incredible coffee—you’re supporting a movement toward equity and transparency in specialty coffee.
