Vanilla Simple Syrup

Today I'm featuring a really easy recipe for Vanilla Simple Syrup that I always have on hand because it is so versatile and so quick to make. I use it when I want a little extra sweetness in my cold brew coffee or if I'm making myself a fancy vanilla latte. It's uses don't stop with coffee though. Simple syrups can be added to alcoholic drinks, drizzled over baked goods and ice cream/sorbet, and added to fruit juices. The list goes on. The best part is that the simple syrup keeps well in the fridge for a long time, up to a month if kept in an airtight glass jar.
It's unconventional but I like adding a pinch of salt to my Vanilla Simple Syrup because I find it tempers the sweetness a bit and brings out the flavour of the vanilla a bit more.

Yield: About 125 mL (1/2 cup)
Ingredients:
- 1/2 cup granulated white sugar
- 1/2 cup water
- 1 tbsp vanilla bean paste
- pinch of salt (optional)
Preparation:
- Add sugar and water to a pot on medium heat.
- Let all of the sugar dissolve, stirring from time to time.
- Once the liquid is clear and all the sugar has dissolved, remove from heat
- Add the vanilla bean paste and salt and stir to combine.
- Transfer to glass jar with airtight lid (I prefer to use a mason jar). You can use the vanilla simple syrup right away or cool to room temperature and then store in the refrigerator for up to one month.
