Vanilla Simple Syrup

Today I'm featuring a really easy recipe for Vanilla Simple Syrup that I always have on hand because it is so versatile and so quick to make. I use it when I want a little extra sweetness in my cold brew coffee or if I'm making myself a fancy vanilla latte. It's uses don't stop with coffee though. Simple syrups can be added to alcoholic drinks, drizzled over baked goods and ice cream/sorbet, and added to fruit juices. The list goes on. The best part is that the simple syrup keeps well in the fridge for a long time, up to a month if kept in an airtight glass jar.

It's unconventional but I like adding a pinch of salt to my Vanilla Simple Syrup because I find it tempers the sweetness a bit and brings out the flavour of the vanilla a bit more.

Yield: About 125 mL (1/2 cup)

Ingredients:

  • 1/2 cup granulated white sugar
  • 1/2 cup water
  • 1 tbsp vanilla bean paste
  • pinch of salt (optional)

Preparation:

  1. Add sugar and water to a pot on medium heat.
  2. Let all of the sugar dissolve, stirring from time to time.
  3. Once the liquid is clear and all the sugar has dissolved, remove from heat
  4. Add the vanilla bean paste and salt and stir to combine.
  5. Transfer to glass jar with airtight lid (I prefer to use a mason jar). You can use the vanilla simple syrup right away or cool to room temperature and then store in the refrigerator for up to one month.
